Richmond-based Nightingale Ice Cream Sandwiches now at Target

Richmond-founded dessert brand launches five flavors in four-pack boxes beginning at the big-box retailer.

Nightingale Ice Cream Sandwiches, the Richmond company known for its oversized, chef-crafted frozen sandwiches, is rolling out to select Target stores across the country. The expansion marks one of the brand’s largest retail placements to date and adds a dedicated freezer shelf for Nightingale products in key markets including the Northeast, Denver, Colorado, and Dallas, Texas.

The rollout began in October 2025. Target locations will carry five flavors in four-pack boxes: Brookie Dough, Cookie Monster, The Classic, Strawberry Shortcake, and Chocolate Blackout. Brookie Dough, a brownie-cookie hybrid filled with chocolate chip cookie crumb ice cream, is new to the lineup.

CEO and co-founder Hannah Pollack said the Target partnership has long been a goal for the company and allows Nightingale to reach shoppers on routine store visits.

Nightingale began in 2016 out of a Richmond restaurant kitchen and has since grown into a national brand supplying more than 5,500 grocers, including Whole Foods Market, Costco, Kroger, The Fresh Market, and Harris Teeter. The sandwiches are produced in small batches using freshly baked cookies and 14 percent butterfat ice cream.
