Fast casual concept Chopt Creative Salad Co. opens its doors at Willow Lawn
The new-to-Richmond chain serves up a full menu of made-to-order salads and bowls, and adds new regionally-inspired choices to the menu every 60 days.
A new fast casual chain has opened its doors at Willow Lawn. Chopt Creative Salad Co. opened to the public Tuesday, serving up salads and bowls in a casual atmosphere.
The restaurant “combines seasonal ingredients and authentic flavors from around the world to invent delicious salads for people to crave,” a representative said by email. “The brand works tirelessly to develop scratch-made dressings and freshly-brewed iced teas and lemonades, all made in house daily. They also build partnerships with regional artisans and purveyors inside each of their communities, like Lyon Breads, to add a unique freshness to the local menu.”
In addition to its regular and build-your-own salad options, Chopt “travels” to a new destination every 60 days. The Willow Lawn location opened with a “Destination Mexico” theme featuring bowls like the Mexican Street Corn Caesar, Spicy Verde Chicken Bowl, and Mexican Goddess Bowl.
“We’re thrilled to announce the opening at Willow Lawn,” said Colin McCabe, Co-Founder of Chopt. “We’ve been on a mission to get people to crave salad and we’re excited to be opening in Richmond, a community that exhibits our values of quality, wellness and healthy living. We look forward to sharing our passion for flavorful eating with the capital city.”
The Richmond location features 75 seats, including communal dining areas, plush booth seating, a large outdoor patio area, and Richmond-inspired wallpaper created in partnership with Batabasta, a Spanish design duo.
On Monday, a day before opening, the store partnered with FeedMore, providing customers with free salads with a donation to the food bank.
The store is located at The Shops at Willow Lawn at 1601 Willow Lawn Drive and is open Monday – Friday 10:00 AM – 9:00 PM; Saturday 10:30 AM – 9:00 PM; Sunday 11:00 AM – 8:00 PM.
